Meet The Chef
Aldo Vespero, Chef Aldo, is an Italian chef that has crossed overseas to share his exquisite cuisine delicacies with us. He originates from Naples, Italy, a great city that is situated on the hills that enclose the Bay of Naples, and is world famous for its amazing culinary arts. This has originated from the great cultural mix of previous ancestors that were settled in this beautiful city, such as the Greek, Spanish and French. Aldo has used this cultural influence to his advantage to spice up his recipes with his very own special touch.
Aldo started cooking since very young and remembers helping around in the kitchen at the age of 11. He remembers enjoying the process of pasta making with his Nonna, and believes that this was what awoke his curiosity for the culinary world. He then pursued his career in culinary arts and has traveled all around the world offering his exceptional expertise in the kitchen and amazing flavors. Chef Al has worked in Aruba, Canarian Islands, and various restaurants all over South Florida, Capriccio in Brickell, Bice in Delray Beach, Bocca di Rosa in Coconut Grove, La bussola in Coral Gables, Acqua Pazza in Sunny Isles, and his very own Also Restaurant & Bar in Hollywood.
Al is a self driven food lover that doesn’t limit himself to anything. He is now executive chef at Italian Red Sauce in Sunrise, FL and is very excited to show us what he has to bring to the table.
While he was moving busily through the kitchen, getting dishes ready, adding spices, and instructing his staff, we noticed how passionate he was in the preparation of each dish he made. It was very impressive to watch him move around preparing his recipes with no stress or pressure as the orders came in, he really knows his way around the kitchen. For him the secret of excellence is not knowing a recipe by heart, but putting your heart to the recipe no matter how many times you’ve done the dish.
As we finished talking with Chef Aldo, his final words were “Welcome to my kitchen, leave your worries at home, bring your smile and come hungry”.
